Haldi ki Sabji // Fresh Turmeric Root Curry is an authentic Rajasthani recipe which is very popular in the city of Jodhpur. Turmeric is often added to increase enhance the flavour of vegetables and pulses, but what if there is a way to make its tasty vegetable? INGREDIENTS FOR HALDI KI SABJI(TURMERIC VEGETABLE )

Green peas – 1 cup

Tomatoes – 4

Green Chili – 2-3

Ginger – 2 inch long piece

Curd – 400 gm (2 cups)

Ghee – 150g (3/4 cups)

Black Pepper – 10

  • Cloves – 5

Cinnamon – 2 pieces

Big Cardamom – 4

Cumin – half a teaspoon

Asafoetida – 2 pinches

Coriander Powder – 2 Tablespoons

Sour Powder – a little spoon

Salt – according to the taste (1 teaspoon)

Green Coriander – 1 table spoon chopped

onion– 1

HOW TO MAKE KACHCHI HALDI KI SABJI(TURMERIC VEGETABLE)

Wash the turmeric pieces, dry the water or wipe with a cloth, peel them and then grate them in a bowl.
Grate this turmeric. (The way carrots are made to make carrot pudding.)
Peel ginger also and take a grate and put it in a vessel.
Peel the onion and finely chop it.
Peel the garlic and grind it finely and keep it in a bowl.
Wash and Cut tomatoes, green chilies (only two or three pieces of a tomato) tomatoes should be fresh.
Now Grind all the ingredients into the mixture and make a paste.
Now add ghee to a pan and heat it on medium flame and fry turmeric in it until the color of turmeric becomes golden.
After frying it, remove the turmeric from ghee and keep it in a vessel.
Now add the onion in this ghee and fry till it turns pink. After frying, take out the onion and put them in a separate vessel.
Now add a vessel to the curd and mix it with pepper powder, coriander, salt and other spices. (It would be better if you use the vessel silver or bronze.)
Now after frying in a second pan, filter the remaining ghee and heat it after it becomes warm and roast until it becomes brown and then add the fennel, ginger, garam masala, cumin, and fry in it. After a light frying, add Masala to the curd. After boiling, after slowing the flame, cook it until the water of the curd completely drys out.
At the time of drying the water, it will start displaying the amount of ghee and curd becomes a lattice.
Now add all the fried turmeric and onion in this spice until cooked to a boil.
After boiling, add chopped tomatoes and green coriander once and take off the lid of the utensil and take off the gas after opening it, open the lid for 20 minutes.
Tasty turmeric vegetable is ready Now eat it with roti or paratha, it will be very fun.

SUGGESTION:

You can also fry the cauliflower in the turmeric vegetable.
Frying turmeric in ghee will end its bitterness.

You can also make turmeric powder without peas and even if you want to cut cauliflower evenly, use it like peas.
